If You Don't Like the Weather in Kentucky........
There's an old adage around here that says "If you don't like the weather in Kentucky, stick around a couple of days, it'll change!", and it certainly rang true last weekend!
Friday and Saturday were unbearably hot and humid with temps around 100 and not a breath of air stirring anywhere. Sunday started out the same, but by mid afternoon torrential rains and high winds blew through, dropping the temp about 20 degrees and breaking the humidity. Labor day morning broke with the temps in the 50's, grey and drizzly was to be the name of the game, with highs in the mid 60's.
A perfect day to stay inside, stay dry, and make a big ol pot of Buddly's 3 Bean Chili!
First, as Socks would say, we start with the setup!
1 and 1/2 lbs of lean ground chuck
1/2 lb Jimmy Dean's Hot Sausage
1-8 oz can of tomato sauce
1 cup tomato juice
1 16 oz can petite diced tomatos
3 tbsps fresh chili powder
Hot sauce
3 different types of canned beans
1 medium onion, diced
6 cloves of garlic, minced finely
1/4 cup each hot bannana pepper rings and chopped jalapenos
12 oz bottle of beer! (forgot to get it in the picture)
Salt and pepper to taste
Crumble the meat in a large pot or Dutch oven.
When it starts to brown, add the onion and salt and pepper.
When well browned, I use that little strainer thingee to drain the fat off the meat into a bowl in the sink.
After draining the fat, add the minced garlic and peppers, and simmer for another 5 minutes.
Add chili powder and stir to evenly coat the meat mixture.
Add the beans. Rinse white beans and kidneys, but use the chili beans as is, broth and all.
Add tomatoes, stir, and simmer another 5 to 6 minutes.
Add the rest of the ingredients, bring to a boil, then simmer, stirring often for an hour or so.
I use about 2 tbsps of Texas Pete and 1 and 1/2 tsp of salt and 1/2 tsp of black pepper. Just for reference, adjust to suit your tastes.
Looks like it's ready to serve, and I'm hungry!
Sprinkle with a little cheddar cheese, a dab of sour cream, some crispy saltines, and I'm ready to eat!

Jesus, good work.
I really enjoyed how you walked everyone through all the steps and included pictures along the way. I am not experienced in the kitchen so something like this would really help out. Could you do more posts like this?
I know I've commented this before, but I would just like to add that I am addicted to Diet Coke. Judging by the picture I am wondering if we share the same addiction? Haha!!

We have a small family butchering business here and of course make all of our own sausage. So when I say we add the hot pork sausage to our chili its hot. LOL

@buddly47 - It was pretty mild, because the audience was all kids. I splashed some olive oil in the frying pan then put in the ground venison and half a diced white onion browned it and added garlic, cumin, salt, a little red pepper and a shake or two of cinnamon. Not much cinnamon or it's overpowering. I prefer diced garlic, too, but didn't have it, tomato sauce, kidney beans, and water, then just boiled it for a good while and served with shredded cheddar. I prefer to let it simmer until it's very thick, then put in another bunch of water and cook it down once more to whatever consistency you like. I like mine a little thicker than soupy. The kids like to put some cheez-it crackers in the bottom of the bowl before it's served to give it some crunch.
@lightnindan - Wish we had a Joe's Crab Shack around here! Being home every night with the family means a lot, Dan. Few things worse than being an old trucker with no family that won't quit because he knows nothing else. I see em all the time here at the tank wash. That venison chili sounds like a winner. Recipe?
@buddly47 - Understood. You'd be missed, I can tell you. You're one of the people who really brightens up this place. We all have to do what's right for us, though.
Mmmm... I love chili. All sorts of it, especially when the weather starts getting cold. I miss Kentucky. I used to have my truck leased to Mercer Transportation out of Louisville, and got to go out there often. Once a year when I went out for my yearly inspection at the main facility, I'd eat at the Joe's Crab Shack overlooking the river. I've been missing the flatbedding life lately, but all good things must come to an end, I suppose, and at least now my wife and kids know when I'm gonna be home. Heck, we just had homemade venison chili the other day.
@distractedbyzombies - Tell ya the truth, my friend, I find myself wondering why I keep coming back here. I've kinda lost interest in it. I keep coming back , read a bit, make a few comments, and can't think of a thing to post about. Guess I'd miss you guys too much to stop completely, and I hate FB, so I keep stopping by here. Who knows, maybe I'll come up with something soon. We'll see!

Thanks for the visit. I tend to eat rice with beans for the amino acid complement. Count Rutherford taught the early Hessians (germanic group) how to eat better by cooking beans with grains. I see that since you are a sausage lover you might be Germanic too.

Wow that was damn good recipe. I will try that out. I made a chili a few days ago, using a "What's cooking" magazine, and it came out well.
