Beatin' mah meat - with pictures

You should know by now, it's all about the food!
It was a nasty winter day here in NE Kentucky. Highs in the teens, overcast with blustery winds, perfect day for a little comfort food for dinner. On our weekly Walmart walkabout I spied a nice package of chuck steak pieces and instantly thought of .......
Country Fried Steak!
Let me show you my meat, and my meat beater.
Place the meat between two layers of plastic wrap to keep splattering to a minimum and let the meat expand in size as you whack it.
You can really work out some frustrations here folks. Just don't get too carried away, we still have to bread it. We're not trying to make hamburger!
After ten minutes of pounding and whacking with your tool, the meat should look something like this.
You'll need one cup of milk and one cup of seasoned flour. We use Kentucky Kernel, but if you don't have access to that you can use one cup all purpose flour and salt, pepper, garlic powder, and paprika.
Dredge the steaks in the flour, shake off excess, dip in the milk, then dredge in the flour again. Fry in 1/4 inch hot oil in a large skillet over medium heat til well browned on both sides.
When done, place on a paper toweled platter to drain. Slide into a warm oven to hold while you make the gravy.
To the pan drippings, add 1/4 cup flour, salt and pepper to taste. Stir with a whisk til you have a nice medium brown roux.
Add two cups milk, stirring constantly til it comes to a boil and thickens.
To serve, sprinkle steaks with thinly sliced scallions and drizzle with milk gravy.
We went with buttered mashed potatos, baby lima beans, and a buttered and toasted whole grain bollio to round it out.
Comfort food at it's finest!
Perfect way to end a cold dreary day.
Belly's full, it's beer thirty, and it's nice and warm in the house. I'm gonna enjoy it while I can. It's back to the grind tomorrow, and I'm not looking forward to it.

It was a little hard to post today. I feel no humor in the world. Been watching the coverage of the tragedy in Tucson all weekend and my heart, tho heavy, goes out to all the family's involved in this senseless act.

My first thought at reading your title was "Oh, he must be making steak." Why yes, I am slightly naive, why do you ask? :p
Anyway, I've never thought to cover the meat with plastic wrap first, that's a great tip. Question, though--when using the pointed side, doesn't the plastic wrap get worked into the meat? Or do you use the flat side first and the pointy side after the meat is to the thickness you wanted?

Ah, you give me the tingles! That's one of my fav meat dishes to eat! I have that same meat beater at my house! I used to call him "Dude"...but now I'll rename him "Buddly"! I just love to whack meat!!

Oh gosh, Buddly, I was so afraid to click on that title, but figured you had somethin' up your sleeve...or on your kitchen counter. Yum! Just awesomely yummy and sinful..paired with the mashed potatoes and lima beans, it's just comfort food heaven! Have never seen the seasoned flour...do you mind looking up what it has in it?
I agree about Tuscon. Terribly sad, and even sadder how the media and lots of people are making it all about politics. This was obviously "well-thought-out" and planned by an individual that, while maybe dysfunctional, had been following politics and criticizing the government for years, in his own warped way. Yes, a person has to be deranged to carry something like that out, but what it is is terrorism....isn't that exactly how terrorists think and how they behave if they are out to prove a point about something they don't agree with, and want to destroy?
I do believe that you could make visiting Kentucky a worthwhile prospect again.
I always have to laugh a little when the temperature dips like that there. My father-in-law used to call us all the time and tease about how he was walking around in his "shirt sleeves" when he was living there.
Now, he lives in upstate New York. We don't gloat when he has a boatload of snow and we have 40 degree weather, though.
