Spoon Bread for the Thanksgiving Smorgasbord!
Just in case you've been living under a rock somewhere here in Xangaland, Lena (ItsWhatEyeKnow) is hosting a Xanga Thanksgiving Smorgasbord.

I'm taking good old southern spoon bread. If you've never eaten it, you just don't know what you've missed.
It's basically a cornbread souffle, sinfully delicious, and so easy to make!
First things first, we got new cookware. T-Fal! WOOHOO!
Now, to the recipe.
Combine one cup conmeal and two cups milk in a saucepan, and cook over low heat til the consistency of mush, stirring frequently.
Should be moderately stiff, like this.
Remove from heat and transfer to a mixing bowl.
Mix in one cup milk, one teaspoon salt, one teaspoon baking powder, three beaten egg yolks, and two tablespoons of salad oil.
With a mixer, beat three egg whites til stiff peaks form.
Gently fold the egg whites into the batter.
Pour batter into a well greased 2 1/2 quart baking dish.
Bake in a preheated 325 degree oven for 1 hour.
While it was in the oven, Karen slow braised some breaded pork chops and fixed a little fresh asparagus.
It's been in the oven for 30 minutes and is rising perfectly!

Pork chops, spoon bread smothered in sweet cream butter, and asparagus.
I feel a nap coming on soon!
As good as spoon bread is with pork, it's even better with roasted turkey, stuffing, and gravy!

Man that looks good! So with this bread...it comes out all moist and gooey on the inside? Is that butter all over it in the last picture? NOM!! When I do this I'm going to add some baked sweet potatoes and seasoned rice to as side dishes to this meal!
@vexations - I've seen their recipe and I don't think they beat their egg whites. Around here we call that batter bread.
For a good while I thought the Boone Tavern in Berea had the be best spoon bread in the world bu the last time I was there I was disappointed with what they served.
@fortheloveofblogging - Our last set was T-Fal and lasted for years, so we stuck with it. Paula Dean's stuff is pretty and it looks durable. We looked at some of it at WalMart too. Try the spoonbread, hubby and the kids will love it!
I love T-Fal Cookware but I must admit that I have my eyes on some Paula Dean Cookware. It so beautiful, just wonder if it is as good of quality as it is pretty!

@buddly47 - Actually, I don't watch a lot of movies or TV. I just have a good memory, have a tendency to remember funny lines from movies I've seen years ago --- and tons of other useless information. My mother still can't believe this. When I was about 2 years old - I crawled into the bathroom cupboards, found my old man's straight razor and was attempting to give myself a shave. She caught me just as I was lathering up - imitating dear old Dad. The crazy thing is, I remember what happened - the color of his razor, the tube of shaving cream, the old bristle brush -- and most importantly - the leather belt I got whooped with for getting into trouble.

@buddly47 - When I think about "Grits" ~~ I think about that movie "My Cousin Vinnie." "How do you like your grits, well done or el dente" "Or, maybe you use those instant grits. "No self respectin' Southerner would make instant grits!" HAHAHAHAHA !!!!!!
@DickDoktorII - Grits are good too, but it must sure as hell take a long time to pick a mess of em. They're so tiny!
@buddly47 - Every time I think of corn bread ~~ I think of the movie "The Green Mile" "My Daddy thank you, my Momma thank you and Mr. Jingles thank you too John" Then the poor little mouse gets stomped to death.
I'm going to make this spoonbread soon, sounds yummy. I bet my Mom would like it too. Damn, you keep this up and I'll be eating those things you call "Grits" next!
@DickDoktorII - Thanks Steve! This spoonbread beats the hell outta regular old cornbread and if you even remotely follow the basic recipe it's almost foolproof!
WOW! I have never had corn bread - always wanted to try it but for now - will give this a whirl sometime soon.This is a dinner I could really go for. I like whipping up things like this - it's good for us growing kids.

@srheam - I think that's an old original Home and Gardens cookbook. We've had it almost forty years. Bought the new 12th edition Home and Gardens last year but never use it. Doesn't have our old standby recipes in it.

@seedsower. Why don't you make a mixed berry pie? Since you grow a lot of stuff and have local markets I'm sure there are all kinds of fruits.Take some blueberries,raspberries and blackberries maybe even some cherries make your filling with the juices as you would any fruit pie.Everyone does pumpkin (GAG) and pecan and this pie is a harvest of flavors.

The meal was delicious and very rich.The new T-Fal helped a lot , poor Buddly Crocker had worn the old set out cooking for you guys,lol.
